The Salverria farms are renowned for the quality of their picking: their cherries are deep blood red and uniform in colour. 

eaf rust is a major challenge for farmers in El Salvador. The Salaverria's have spent 8 years regenerating the soil through usage of  Huisil, an organic compost/ fertilizer. The coffees are wet milled using eco pulpers called Jotagallo that are doing about 80% mechanical demucilager.

The coffee is soaked overnight for 10 hours after pulping producing a brighter, cleaner cup. The coffees are then dried on clay patios for up to 15 days.
